Manuka Chai

Serves 10
Time 15 minutes


8 cardamom pods

4 sticks cinnamon

4 star anise

3 cloves

½ cup loose black tea leaves

1 heaped tsp manuka honey per serving


Place the cardamom, cinnamon and star anise in a mortar and pestle and crush. Stir through tea leaves. This mixture can be stored in an airtight container.

Steep 1-2 tablespoons of the tea mixture in 3 tablespoons of boiling water. Remove the chai mixture, top up with milk and stir through a teaspoon of manuka honey.
