3 bagels, sliced in halves
500 gms gouda cheese, grated
4 slices bacon, chopped
1 onion, chopped
1 garlic clove, chopped
1 mango, sliced
½ cup chives, chopped
½ cup flat leaf parsley, chopped
3-4 tbsp butter
Cos lettuce and chives to garnish
Heat the pan on a medium heat, add olive oil and butter, and fry the onions and garlic.Stir in the bacon.
In a bowl, mix the bacon, onions and garlic with the cheese and herbs.
On a baking tray, place the mixture on the bagel halves and pop under the grill until golden brown.
Garnish with mango slices, cos lettuce and chives.
