Ingredients
Salad:
2 large handfuls baby spinach
3 mandarins, peeled and segmented
¾ cup pomegranate seeds
1 medium avocado, diced
¼ cup sliced almonds, toasted
¼ cup chopped pecans (roasted) or walnuts
Dressing:
2 tbsp apple cider vinegar
½ cup Greek yoghurt
1 tbsp honey
1 tbsp poppy seeds
1 tbsp nut milk of choice, if needed
Method
In a salad bowl layer spinach, mandarin segments, pomegranate seeds, avocado, almonds and pecans.
For the dressing, in a small bowl whisk together vinegar, Greek yoghurt, honey, poppy seeds and a pinch of salt. Mix in a dash of nut milk to thin if needed.
Pour desired amount of dressing over the salad and toss together to combine.
