3 cups baking flour
2 cup warm water
1 tsp yeast
1 pinch salt *caution, don’t put too much in or you can retard the yeast
In a large mixing bowl, add baking flour, yeast, water and salt. Mix together and use spatula to scrape down mixture.
Cling film and place on bench for at least 24 hours.
Place cast iron pot with lid into oven at 240 degrees celsius. Take pot out of oven and insert dough by rolling around the outside of the bowl with the spatula.
Place lid on pot and place back into oven for 30 minutes, take the lid off and leave in oven for a further 15 minutes. Remove from oven and cool.
