Lobster Roll with Avocado & Chive Mayonnaise


500 gms Lobster cooked
2 Avocado
1 bunch water cress
2 roma tomatoes, diced

2 egg yolks
2tbsp Dijon mustard
50ml sherry vinegar
50ml lemon juice
pinch of salt and pepper
pure olive oil
1 bunch Chives
1 bunch Dill


Combine first 4 ingredients together, stir with a whisk and while stirring continuously, slowly add the oil to emulsify, if it gets too thick add a little water. Season to taste with salt and pepper, then add dill and chives.

Roughly chop the lobster and add the lobster, tomatoes, watercress, avocado into the mayonnaise.
