Linguine with Rocket, Goats Cheese & Pistachio Pesto

Serves 2-4

1 500g packet linguine
¼ cup extra virgin olive oil
2 cloves garlic
1 chilli, chopped
1 red onion, sliced
Salt and pepper
150g bacon or pancetta, chopped

1 bunch parsley, chopped
500g goats cheese
500g rocket, chopped

½ cup pine nuts, toasted
½ cup pistachio nuts
1 cup parmesan
1 cup extra virgin olive oil
1 bunch basil, picked

Pinch of salt and pepper


To make the pesto, blend the pine nuts, pistachios, basil, olive oil, parmesan cheese and a pinch of salt and pepper.

Cook the pasta, as per the packet instructions.

Sweat the garlic, red onion, chilli and pancetta. Just before you take this off the heat, mix through the parsley and rocket. Carefully place the pasta into the pan and fold it together until combined well.

Plate up the linguine, and top with the pesto and goats cheese.
