Linguine with Sardines & Breadcrumbs


200 gms linguini
1 red onion, sliced
1 long red chilli, sliced
6 garlic cloves, thinly sliced
5 fresh sardines fillets, boned, halved
2 tbsp. parsley, chopped
1 tbsp. chives, chopped
1 cup breadcrumbs
1 lemon, zested
parmesan, to serve


In a pot of salted boiling water cook pasta as per pack instructions.
Heat oil in a frying pan over a medium to high flame.
Add garlic, onion and chilli. Cook for 1 – 2 minutes or until onion begins to soften.
Add sardines, chives and parsley. Cook for a further minute.
Add drained pasta to the pan. Season to taste.
Remove from heat and drizzle with olive oil.
Serve topped with breadcrumbs, freshly grated parmesan and lemon zest.
