½ packet spelt pasta
2 garlic cloves, crushed
1 small Spanish onion, finely sliced
1 cup lentils, cooked, drained (tin or fresh)
1 tbsp olive oil
½ head large cauliflower, cut into small florets
¼ cup flat leaf parsley, finely chopped
1 punnet perino tomatoes, chopped into halves
2 cups shredded kale leaves
Salt and pepper to taste
Cook pasta as per packet directions.
Heat oil in pan, add onion and garlic and saute for 3-4 minutes. Next add cauliflower florets, stirring constantly until they get a nice colour and start to soften. Add lentils and cook for 1-2 minutes until cauliflower is soft. Blend the cauliflower mixture in a food processor until smooth and creamy.
In a hot pan, combine the pasta and the cauliflower sauce for a minute or so. Add the tomato halves and kale, and let wilt. Add parsley, and season to taste.
