1 tbsp extra virgin olive oil
1 onion, finely chopped
3 garlic cloves, microplaned
1 small piece ginger, microplaned
1 small piece fresh turmeric, microplaned
1 tsp curry powder
1 tsp cumin powder
½ tsp cayenne pepper
2 apples, cubbed
1 cup red split lentils
1 x (270ml) can coconut milk
2 cups water
Salt & pepper
1 bunch coriander, roughly chopped
Saute onion, garlic, ginger and turmeric with extra virgin olive oil in a hot pan over medium heat. Add spices and warm through.
Add apple, lentils, coconut milk and 2 cups water and season if needed.
Cook for 25-30 minutes.
Serve with lime juice, coconut yogurt, coriander and chilli flakes.
