1 ½ cups of almond meal
1 – 2 Tbsp coconut flour
2 – 3 tsps of Blackmores Vitality Super Greens + Nature Boost Antioxidants
¼ cup freshly squeezed lemon juice
Zest of one lemon
4 tbsp maple syrup or rice malt syrup
¼ cup coconut butter
2 tsp vanilla extract
Pinch of salt
Cup of desiccated coconut (for coating)
Put all ingredients into a food processor until combined.
Check the consistency and taste add more flour or coconut butter until the mixture resembles a dough that you can roll into a ball. Roll into balls and roll into the desiccated coconut.
Pop them into the fridge to set and keep cool until serving.
