Lemon Spaghetti

Serves 4
Time 15 minutes


2 tbsp extra virgin olive oil
1 red onion, chopped
2 garlic cloves, minced
¼ cup extra virgin olive oil
1 pack spaghetti
3 cups raw spinach
½ lemon, juice and zest
Salt & pepper
½ tsp chilli flakes

To serve


Cook spaghetti in a large pot of salted boiling water as per packet instructions. Stir through to ensure pasta doesn’t stick.
Heat extra virgin olive oil in a pan and add red onion and garlic. Cook until translucent.
Add drained pasta to the pan, toss through with ¼ cup of extra virgin olive oil, raw spinach, lemon juice and zest. Season with salt, pepper and chilli flakes.
Serve with grated parmesan cheese and parsley.
