Leftover Rice Broccoli Patties

Serves 4
Time 30 minutes

Ingredients

2 cups rice, refrigerated 

3 eggs

1 cup cheddar cheese, grated

1 cup broccoli, par cooked, roughly chopped

½ cup old sourdough, crumbed

Salt & pepper

1 tbsp extra virgin olive oil 

 

To serve

Fried tomato 

Eggs cooked to your liking

Method

In a lidded pot steam broccoli for 10 minutes.

In a large bowl combine all ingredients. Roll the mixture in your hands and press firmly to ensure the patties are combined 

Add extra virgin olive oil to a large frying pan on medium heat, add the fritters to the pan and press down with a spatula. Cook for 3-4 minutes, or until golden brown on each side. 

Serve with an egg and fried tomato.
