Lavender Pancakes with Cape Gooseberry Sauce

Serves 6
Time 30 minutes


For the sauce

¼ cup butter

1 tsp lavender sprigs

¼ cup sugar

1 tbsp Cape Gooseberry paste

1 tbsp brandy

¼ cup cream

1 cup of Cape Gooseberries


For the pancakes

2 cups self raising flour

1 tsp baking powder

1 tsp vanilla bean paste

1 tsp dried lavender sprigs

2 eggs

½ cup sugar

1 cup milk

1 tbsp butter for cooking


To serve

Double cream

Icing sugar


Add butter, lavender, sugar and gooseberry paste to a medium saucepan on medium heat. Add the brandy and cream with the Gooseberries and stir to combine. Leave to cook for 3-4 minutes.

Add all the pancake ingredients to a large mixing bowl and whisk to combine. Melt butter on a large pan or griddle, and add ⅓ cup of the batter to the pan at a time to cook. 

Serve pancakes in stacks of three with Cape Gooseberry Sauce, dollop of cream and dusting of icing sugar.
