Kefir Potato Salad

Serves 8 as a side
Time 30 minutes


12 new potatoes, halved

4 eggs

2 large apple, grated

1/4 red cabbage, shredded

2 celery stalks, sliced

2 garlic cloves, finely sliced

1 bunch parsley, chopped

1 bunch dill, chopped

1 bunch chives, chopped


For the dressing

4 tbsp extra virgin olive oil

2 tbsp apple cider vinegar

½ lemon, juice

1 cup kefir 

Salt & pepper


In a large pot of boiling water cook potatoes for 15-20 minutes or until soft.

Boil eggs too for 12 mins. Drain and cool. Dice both potatoes and eggs.

In a large bowl add grated apple, cabbage, garlic and celery.

For the kefir dressing, in a small bowl add extra virgin olive oil, apple cider vinegar, lemon and kefir and mix to combine.

Add kefir dressing and toss lightly. 

Add parsley, dill and salt.

Chill until ready to serve. 

Sprinkle with chives and lemon.
