400 gms. chicken mince
1 red onion, sliced
1 tbsp. honey
½ tsp. sea salt
½ tsp. freshly ground black pepper
5 cups thinly julienned kale with stems
½ cup chopped roasted unsalted peanuts or white sesame seeds
3 tbsp. peanut butter or other nut/seed butter
½ cup low-sodium chicken stock, warmed
2 tsp. soy sauce
In a large mixing bowl, add peanuts, peanut butter, stock, soy sauce and honey. Mix until well combined.
Heat 2 – 3 tbsp. olive oil in a pan. Add onion and chicken mince. Cook for 2 – 3 minutes or until nicely browned.
Add kale, cook for a futher 2 – 3 minutes or until kale wilts and chicken is cooked through.
Stir in peanut sauce.
