Kale and Potato Soup


1 large white onion, finely chopped

2 garlic cloves, crushed, minced

1 1/2L of vegetable or chicken stock

2 potatoes, cubed

2 cups kale, rinsed and julienned

1/3 cup full fat yoghurt

1 tsp. sea salt

1 tsp. pepper


In a saucepan sauté the onions till translucent. Add the garlic and sauté for one more minute.

Add the chicken stock, salt, pepper and potatoes and bring to a simmer for 15 minutes.

Add the kale, yoghurt, simmer for 5 more minutes and serve.
