Jerk Tofu Wrap

Serves 2-4
Time 20 minutes


1 drizzle extra virgin olive oil

1 block firm tofu, dried and cubed

1 tsp garlic powder

1 tsp onion powder

1 tsp thyme

1 tsp parsley

1 pinch salt

1 tsp paprika

½ tsp cayenne pepper

1 pinch black pepper

1 pinch allspice

1 tsp fresh lime juice

2 cups water

1 pinch stevia


To Serve:

1 wholegrain wrap

¼ tin black beans, rinsed & drained

1 mango, sliced

1 cucumber, sliced

1 bunch parsley, roughly chopped

1 fresh lime


In a medium to large bowl combine all spice, garlic powder, onion powder, cayenne pepper, paprika and natvia.

Meanwhile, chop the parsley and slice the tofu into strips.

Add the parsley, lime juice and olive oil into the spice mixture. Mix together.

Next, marinate the tofu strips in the jerk sauce mixture.

In a medium fry pan heat olive oil. Add tofu and jerk sauce. Cook on either side for 10-15 mins or until caramelised and golden. Remove from pan.

Layer the wrap with black beans, tofu, mango, cucumber, parsley and fresh lime.

Fold into a burrito.
