Jambalaya with Turkey, Sausage and Shrimp

1 turkey breast, diced
1 onion
1 stalk celery, diced
1 chorizo sausage, sliced
Extra virgin olive oil
1 bay leaf
3 cloves garlic
1 red capsicum
2 chillies
1 tbsp cajun spice (paprika, dried oregano, cracked black pepper, onion flakes, thyme, dried garlic)
¼ cup tomato paste
1 cup bellino tomatoes, halved
2 cups okra, sliced
2L chicken stock
½ bunch coriander, chopped
½ bunch parsley, chopped
500g prawns (shrimp)


Seal the turkey in a large hot pan with olive oil, salt and pepper.

Next, add the onion, garlic, chorizo, chillies, bay leaf, thyme, cajun pepper and chillies and fry for a few minutes.

Add the remaining vegetables to the pan with the stock and simmer with the lid on for 10 – 15 minutes.

Add the prawns and remaining herbs and continue to simmer until just cooked.
