Huevos a La Flamenca


30g bacon, diced

1 chorizo, sliced into thick rounds

4 eggs

2 ½ tablespoons dry sherry

60g onion, finely chopped

2 ½ tsp. finely chopped garlic

1 roasted red capsicum, skin removed and diced

2 medium sized tomatoes, cooked, peeled and chopped (or canned)

3 asparagus, sliced

1 cup peas

1 tbsp. parsley, finely chopped

1 tbsp. basil, finely chopped

salt and pepper

extra virgin olive oil

thick sliced toast, to serve


Add chorizo and bacon to pan and fry. Add onion, garlic and season with salt. Add vegetables, herbs, tomatoes and sherry. Cook for 5 mins and move into baking dish. Create a hole in the middle, crack four eggs into it, drizzle with olive oil and cook at 200C for 12 minutes. Serve with thick sliced toast.
