600g green king prawns, shell removed and deveined
½ cup of honey
2 tbsp. black and white sesames seeds
1 tbsp. fresh ginger, finely grated
2 tsp. sea salt
1 cup brown rice flour
2 tsp. white pepper
1 cup water
2 tbsp. extra virgin coconut oil
1 bunch of steamed bok choy
Fresh coriander for serving
In a bowl mix together the brown rice flour, water, egg and pepper. Leave to rest for 10 minutes.
In saucepan heat, on a low to medium heat, melt the honey, ginger and sesame seeds. Turn heat off.
Heat a non-stick frying pan, medium heat, and add the coconut oil.
Dip the prawns in the brown rice batter, then into the frying pan and cook for 3-4 minutes. Once cooked, dip the prawns into the honey mixture.
Leave the prawns to cool on a wire rack.
Serve on a bed of steamed bok with freshly chopped coriander on top.
