Homemade Crumpets

Serves 4 large or 12 small crumpets
Time 30 mins + 30 mins resting


3 cups plain flour
1/4 cup water
2 tbsp butter melted
2 tsp salt
2 tsp sugar
2 ½ tsp dry yeast
2 ¼ cups warm milk
1 tsp baking soda

Tomato Salsa ingredients
1 punnet perino tomatoes
¼ bunch parsley
¼ bunch chives
Salt and pepper
Extra virgin olive oil

To Serve
Fried egg
Crispy Bacon
Tomato Salsa


In a bowl stir together yeast and water. Let stand for 5-10 minutes. Add warm milk, butter, salt, sugar and baking soda. Add the flour and stir until the batter becomes smooth. Let stand for 30 minutes.

Grease griddle and heat over medium-low heat. Drop batter into crumpet/egg rings. Reduce heat to low, cover griddle and cook crumpets until tops look dry, about 5-10 minutes.

Flip them over and cook for a couple of minutes.

Serve with the tomato salsa, crispy bacon and a fried egg.
