Hemp Seeds and Cashew Dressing with Tomato and Bread Salad


½ cup hulled hemp seeds

½ cup cashews, toasted (150C in the oven for 5 minutes)

¼ – ½ cup water

½ bunch of parsley, stems removed, washed and chopped

2 tbsp. nutritional yeast

2 tbsp. lemon juice

1 clove garlic, peeled

1 tsp. salt

salt and pepper to taste

¼ cup olive oil


Tomato and Bread Salad

1 punnet perino tomatoes (duets), cut in half

1 bunch of basil, washed and leave removed

1 cup of bread cut into 1cm cubes, toast in the oven (150C for 5 minutes)

2 tbsp. black olives, pips remove and roughly chopped


In a food processor place all of the dressing ingredient and blend till smooth.

In a bowl mix together the salad ingredients.

Serve salad on a platter with a generous amount of dressing on top.
