Healthy Banana French Toast

Ingredients

4-6 slices of rice bread or wheat-free bread
2-4 eggs
1 tbsp honey
¼ tsp of nutmeg
½ tsp cinnamon
1 banana
Olive oil spray

Method

Preheat the oven to 180C.

Mix the eggs, cinnamon and nutmeg together in a mixing bowl.  

Dip the bread into the egg mixture and place on an oil sprayed baking tray.

Top with sliced banana and drizzle with a little honey and place in the oven for 10 minutes or until golden brown on top.
Serve warm with a cup of herbal tea.
