Hand Made Noodles

Serves 4
Time 30 minutes


3 cups Tipo 00 flour
1 tsp granulated salt
1 tsp baking soda
2 eggs, beaten
½ cup warm water

To serve:
4 spring onions, sliced
1 tsp chilli oil
1 cup warm chicken broth


On a clean bench, add the flour and salt and make a well in the centre. Pour in the eggs and warm water, then use your hands to bring everything together into a dough. (This can also be done in a Magimix Cook Expert on the “Bread” setting). Knead the dough into a ball and leave it to rest and soften for about 15 minutes.

Flour the bench and gently roll the dough into a flat disc, about ½cm thick. Dust the dough with flour again to ensure it doesn’t stick, and loosely fold it onto itself in a zig-zag pattern. Slice the dough into thin strips, and either set aside for later use or pop straight into boiling water to cook for about 3-5 minutes.

For a simple meal, serve the fresh cooked noodles with the chicken broth, chilli oil and spring onions.
