4 turkey sausages
2-3 large potatoes, scrubbed and cut into 2cm cubes approx.
1½ cups of cauliflower florets
½ avocado, roughly chopped
1 tbsp. cumin
1 bunch parsley, finely chopped
salt and pepper
In a large saucepan place the chunks of potato into water and bring to the boil. When the water in boiling add the cauliflower and cook for 20 minutes or until soft.
Drain and add the parsley, cumin, avocado, 2 tbsp. olive oil, salt and pepper. Blitz with stick blender until smooth.
Heat a frying pan with a little olive oil, add the turkey sausages and cook for 5 minutes on each side. Serve on a plate with the mash and sausage on top.
