6 eggs, hard-boiled
1 ripe avocado
1 ½ tbsp lime juice
½ long green chilli, finely chopped
1 tbsp coriander, finely chopped
1 tsp extra virgin olive oil
Salt and pepper
1 tbsp chives, finely chopped
Add the eggs to a saucepan of boiling water and hard boil for 10 minutes. Allow to cool, then carefully peel the eggs and cut in half.
Scoop out the yolks and place in a medium bowl. Place the egg yolks flat side down on a kitchen towel to dry.
Scoop out the avocado flesh, add to the egg yolks along with the lime juice, chilli, coriander, olive oil and a generous pinch of salt.
Turn to the egg whites over and fill the holes with guacamole.
Arrange on a serving tray and sprinkle with chives.
