Grilled Haloumi Cheese, Tomato and Basil Mountain Bread Sandwich

Ingredients

3 pieces of mountain bread
100-150g  haloumi, thin-medium slices
1 tomato sliced
6 large basil leaves
salt and pepper to taste
Extra virgin olive oil to drizzle

 

Method

Pre-heat the grill to hot.

Place one piece of mountain bread on a baking paper lined baking  tray. Top with tomato, basil, salt and pepper. Layer with another slice of mountain bread on top and then place the haloumi cheese on it. Put it under the grill for 2-3 minutes or until the cheese started to melt and blister.

Remove the baking tray from the grill, put the final layer of mountain bread on top of the grilled haloumi and drizzle with  a little olive oil. Place under the grill again for 30-60 seconds until lightly toasted.

Cut in half and serve.
