Grilled Halloumi, Snow Pea and Green Bean Salad

Ingredients

60g Halloumi cheese, cup into thin slices

50g of green beans, trimmed

50g of snow beans, trimmed

20g of pear tomatoes, halved

½ cup of rocket

juice of 1 lemon

Sea salt and pepper to taste

Method

Cook green beans and snow peas in boiling water over medium heat until just tender.

Preheat the grill to a high heat and grill until golden on both sides.

In a bowl combine all the ingredients and season to taste.
