Grilled Halloumi Bruschetta

Serves 2
Time 20 minutes


1 x 180g Cyprus style haloumi, cut into cubes 

2 tbsp extra virgin olive oil 

½ red onion, sliced 

2 cloves garlic, sliced 


Olive & Tomato Salsa 

¼ cup Kalamata olives halved

¼ cup green olives halved

½ punnet cherry tomatoes, quartered 

1 bunch of fresh basil, roughly chopped

1 tbsp extra virgin olive oil 

Salt & pepper


2 slices of sourdough bread, toasted


Add onion and garlic to a hot pan over medium heat and sautee in olive oil until the onion is soft. Add the halloumi and fry on all sides until light golden brown. 

Meanwhile, combine all of the ingredients for the olive and tomato salsa. 

Remove from the heat and stir through the basil. Pour the haloumi mixture over the toasted sourdough and top with the salsa.
