8 3 x 5 inch thin slices of seedless watermelon
1 cup of freekah tabouli
4 grilled skinless chicken breasts, seasoned with sea salt and pepper, chilled and sliced
Frekah Tabouli Recipe:
1/2 cup Frekah, cooked
2 large tomatoes, finely chopped
1/4 cup lemon juice
2 tbsp. lemon zest
2 tbsp. fresh chives, finely chopped
4 cups flat-leaf parsley, finely chopped
1 cup mint, finely chopped
1/4 cup extra virgin olive oil
Sea salt, to taste
Butterfly the chicken, sprinkle with salt & pepper and chilli flakes.
Drizzle with a little olive oil and grill on griddle pan 3 – 5 minutes each side. Set aside.
Place a watermelon slice on each of 4 plates. Spoon half of the tabouli over the 4 watermelon slices in as even a layer as possible.
Place another slice of watermelon over the tabouli. Spoon the remaining tabouli over the top slices of watermelon.
Arrange the chicken slices over the tabouli.
Dust the chicken slices with chives and parsley.
