2 turkey breasts, skinless, cut into thinner portion size
3 tbsp green tea, loose
1 tsp Chinese five spice powder
black sesame seeds
2 tsp sesame oil
1 packet soba noodles
1 cup shiitake mushrooms, sliced
1L chicken broth
1 chilli, diced1 bunch coriander, chopped
2 tbsp mirin
3 tbsp soya sauce
Make the dry rub by mixing the black sesame seeds, green tea, chilli flakes and green tea. Drizzle a little sesame oil on both sides of the turkey and rub the spice mix into both sides too.
In a medium to hot fry pan, fry the turkey for a couple of minutes on each side until cooked through.
Cook noodles according to packet directions in a hot pot with chicken broth and with the mushrooms. Transfer cooked noodles to a bowl with coriander, chilli, mirin and soya sauce. Toss well.
Remove turkey breasts from the pan, rest for a few minutes then thinly slice served on top of noodles. Serve with a little more of the broth pour over it.
