Greek Yoghurt Pancakes with Berries

Ingredients

  • 1 ? cups self raising flour

  • 1/4 cup sugar

  • 2 tbsp unsalted butter, melted

  • 3 eggs

  • 1 cup Greek yogurt

  • ½ cup thickened cream

  • ½ cup milk

  • blueberries, strawberries, raspberries

Method

  • In a large mixing bowl, combine eggs and sugar.

  • Sift in flour. Add yoghurt, cream and milk and whisk until smooth.

  • Set batter aside for 30 minutes to rest.

  • Add a little butter to a crepe pan over a medium heat.

  • Ladle a spoonful of batter on to the pan, cook for 1 to 2 minutes or until bubbles form on top.

  • Flip and cook 1 to 2 minutes on the other side. Transfer to a plate.

  • As you continue to cook the pancakes stack them on top of each other to keep them warm.

  • Top with mixed berries, maple syrup and thick cream.
