Ingredients

1 ? cups self raising flour

1/4 cup sugar

2 tbsp unsalted butter, melted

3 eggs

1 cup Greek yogurt
-
½ cup thickened cream
-
½ cup milk
- blueberries, strawberries, raspberries
Method

In a large mixing bowl, combine eggs and sugar.

Sift in flour. Add yoghurt, cream and milk and whisk until smooth.

Set batter aside for 30 minutes to rest.

Add a little butter to a crepe pan over a medium heat.

Ladle a spoonful of batter on to the pan, cook for 1 to 2 minutes or until bubbles form on top.

Flip and cook 1 to 2 minutes on the other side. Transfer to a plate.

As you continue to cook the pancakes stack them on top of each other to keep them warm.
- Top with mixed berries, maple syrup and thick cream.
