4 medium potatoes, peeled and quartered
½ cup extra virgin olive oil
¼ cup lemon juice (about 2 lemons)
1 cup vegetable broth
2 garlic cloves, microplaned
1 tsp dried oregano
1 tsp paprika
1 pinch salt
1 pinch pepper
Preheat the oven to 160°C.
In a large baking tray toss potatoes with extra virgin olive oil, garlic, lemon juice, broth, garlic, oregano, paprika, salt and pepper.
Cover with aluminium foil and bake for 1 hour or until the potatoes are cooked.
Remove foil and bake for a further 30 minutes.
