1 tbsp extra virgin olive oil
2 soy, linseed and chia corn thins
2 tbsp hummus
1 grapefruit, sliced (rind removed)
170g halloumi, sliced
½ bunch chives, finely chopped
With a non-stick pan, heat the olive oil over medium heat, and grill halloumi slices on the pan. Flip when golden brown and cook on the other side.
Spread hummus onto the corn thins, add grilled halloumi, grapefruit and chives on top to serve.
