Goats Cheese Potato Nests

Serves 6
Time 30 minutes


1 tbsp extra virgin olive oil 

2 large Agria/Russet or floury potatoes peeled and grated

1 tbsp rice flour 

½ tsp salt

½ tsp black pepper 

60g goats cheese

1 small beetroot, peeled and cut into matchsticks

1 radish, cut into matchsticks

½ apple cut into matchsticks

Fresh thyme sprigs, to garnish

Lemon zest, to garnish


Preheat the oven to 200C. 

Lined a 12 hole muffin pan with a little square of baking paper in the bottom of each hole, and lightly brush each hole with olive oil. 

Place all grated potato onto a fresh tea towel and wring out excess moisture into a bowl. 

In a bowl stir potato, flour, salt and pepper. 

Press potato mixture into a muffin tray lined with baking paper and make a small dent in each for the filling.

Bake for 20-25 minutes or until golden. 

Place on serving platter and top with 1 tsp of goats cheese

Add matchsticks of apple, radish and beetroot.

Sprinkle with a zest of lemon and thyme.
