Gluten-Free Salmon and Parmesan Fritters

150g salmon, finely chopped
¼ cup freshly grated Parmesan
2 eggs
1 cup buckwheat flour
½ cup full cream milk
1 tbsp lemon zest
1 tbsp lemon juice
½ tsp freshly ground black pepper
¼ cup parsley, finely chopped


In a bowl, combine flour, salt, pepper, eggs, milk and mix into a batter. Fold through salmon, parmesan cheese and parsley.

In a large frying pan, add extra virgin olive oil and with a large spoon, ladle in the batter and cook 3 minutes each side.
