Gluten Free Flatbread Basted with Extra Virgin Olive Oil

Serves 6
Time 30 minutes


2 cups gluten free flour plus some for the bench
2 tsp baking powder
1 cup Greek yoghurt
1 pinch salt

Gluten Free flour, for kneading
2 tbsp extra virgin olive oil 

To Serve
Extra virgin olive oil


In a large mixing bowl combine gluten free flour, baking powder and salt. Add Greek yoghurt and use a spatula to combine.
Turn out the dough onto a floured surface and use your hands to bring it together. Divide into two, roll each half into a ball and flatten.
Add olive oil into a pan over medium heat. Add bread and cook until golden brown on each side.
Drizzle generously with extra virgin olive oil and sprinkle with dukkah. Cut into wedges to serve.
