Gluten-Free Banana, Strawberry and Macadamia Bread

Time 25 minutes


2 cups quinoa flour
½ tsp. baking powder
½ cup maple syrup
1 cup ripe banana, mashed
1 cup strawberries, cut into quarters
½ cup macadamias, roughly chopped
1 cup coconut milk
⅓ cup extra virgin coconut oil, melted
1 tsp cinnamon

To serve
½ coconut yoghurt
2 tsp cinnamon


Preheat the oven to 180C. In a large bowl mix the flour, and bicarbonate soda. Add all the remaining ingredients, mix well and pour into a greased bread tins. Once cooked leave to cool, and drizzle with a little olive oil. Cook for 25-30 minutes.
