Gazpacho

Serves 2 as a main or 4 as starter
Time 15 minutes

Ingredients

6 tomatoes, halved
1 cucumber, chopped1 garlic clove
¼ white onion, chopped
1 tsp sherry vinegar
4 tbsp extra virgin olive oil
2 cups water
½ jalapeno, chopped
1 bunch coriander, chopped 

To serve
Extra virgin olive oil
2 slices sourdough, toasted 

Method

Add all of the ingredients to a food processor, blend until all of the ingredients have combined. 

Serve with a drizzle of extra virgin olive oil and sourdough.
