Ingredients
¼ cup olive oil
4 cloves garlic, crushed
2 red chillies, chopped
700g prawns, deveined
50g butter
3 spring onions, chopped
¼ cup parsley, chopped
¼ cup roquette, chopped
crusty bread and a lemon wedge to serve
Method
Warm olive oil in a medium heat pan and slowly cook the garlic and chilli. Toss the prawns into the pan and add some butter. Sprinkle with pepper and add the parsley, roquette and spring onions just before you take the pan off the heat. Serve with crusty bread and lemon wedges.
