400g fillet steak, sliced into thin strips
2 tbsp olive oil
6 garlic cloves, finely chopped
1 long red chilli, thinly sliced
4 spring onions, green and white parts, roughly chopped
½ cup snow peas, sliced on an angle
¼ cup parsley, chopped
¼ cup coriander, chopped
¼ cup bean shoots
1 tbsp Sriracha chilli sauce
Salt and pepper, to taste
3 tsp light soy sauce
¼ tsp cayenne pepper or chilli flakes
¼ cup extra virgin olive oil
1 packet Asian wheat noodles
Combine the marinade ingredients together in a bowl. Season the steak with salt and pepper then add to the marinade.
Cook the noodles in a pot of salted boiling water for 5-7 minutes until al dente.
Drizzle the olive oil in a large pan then turn on a low heat and add the garlic, chilli and whites of the spring onions. Toss to coat in the oil and season with salt and pepper. Fry for 2-3 minutes until slightly softened.
Add the steak and its marinade to the pan along with the spring onion greens, snowpeas and butter and turn the heat up to medium-high. Brown the beef all over then stir through the parsley, coriander and bean shoots. Add the cooked noodles with a little cooking water and the Sriracha and toss everything together. Serve hot.
