Ingredients
2 cups apple juice
2½ tbsp agar-agar
pinch sea salt
mango flesh, chopped
1½ cups raspberries
125g silken tofu
1 tbsp agave syrup
1 tsp vanilla extract
garnish with extra berries
Method
Method
In a pan combine apple juice with agar and salt. Bring to boil then simmer for 10 min, or until agar dissolves. Place fruit (only 1 cup berries) and tofu all in separate bowls and pour 1/3 of apple juice mixture over each. Add agave syrup and vanilla to the tofu. Puree each separately. Add rest of berries to berry puree. To assemble layer the three mixture in glasses and sprinkle with berries.
