Fried Egg with Brussel Sprouts and Chorizo Beer Hash

Ingredients

300g brussels sprouts (outside leaves removed), sliced finely

1 red onion, sliced finely

 Cloves garlic, minced

2 rashers Bacon, diced

Olive oil

3
 chorizo links, outer casing removed and crumbled (can also use dried)

 cup beer

parsley

chives

 Medium blue or red potatoes, cooked and quartered

Salt and pepper

Butter

2 large eggs

Method

Heat oil in a pan.

Add bacon, onion, garlic and stir.

Add brussel sprouts.

Add a little beer and pop the lid on until the brussel sprouts have softened slightly.

Add chorizo and then stir in parsley, chives and potatoes.

In a separate pan, heat and add butter. Fry eggs.

On a plate, pour the brussel sprouts mixture and top with the fried eggs.
