Fried Chicken Burger with Asian Slaw

6 Chicken breast fillets

1 cup plain Flour
½ cup self-raising flour
½ cup cornflour
1 tbsp cumin
1 tbsp smoked paprika
1 tbsp cayenne pepper
1 tbsp white pepper
1 tbsp chilli flakes

4 eggs
½ cup milk
Salt and pepper

Asian Slaw
¼ Wombok, chopped
½ bunch spring onion, chopped
½ bunch coriander, chopped
1 cucumber, diced
1 chilli, deseeded

½ cup mayonnaise
2 tbsp soy sauce
2 tbsp mirin
2 tbsp black vinegar
¼ cup sesame seeds

Brioche Burger buns and pickles to serve


Cut the chicken fillets into half so the fillets are even and not too thick.

Whisk the eggs, milk and salt and pepper together.

Mix the flours together with the spices in a separate bowl.

Dip the chicken fillet into the egg mixture, then the flour mixture and repeat with dipping into the egg and then flour again to ensure a crispy crumb once cooked.

In a hot pan with a good amount of olive oil, fry the coated fillets on each side until golden and just cooked through.

Mix all the Asian Slaw ingredients together in a bowl with the dressing.

Construct the burger and serve with pickles and the slaw.
