Flame Grilled Beef Koftas

Serves 4
Time 30 minutes


500g premium beef mince
¼ cup chopped chives
¼ cup chopped coriander
1 small red onion, finely diced
1 clove garlic, grated
1 tsp smoked paprika
1 tsp cumin
2 tbsp chipotle in adobo sauce
1 tsp tabasco
Salt and pepper
To Serve
Long white bread rolls
American mustard


Place all the kofta ingredients in a large bowl and mix together well with your hands until combined. Form the mixture into fat sausage shapes, then wrap each around a large metal skewer/kebab stick.

Over a BBQ or hot coals cook the meat until cooked through and slightly charred. Spread some mustard on a roll, top with pickles then remove the kofta from the skewer and place inside the roll to serve.
