Fennel, Green Beans, Asparagus and Smoked Chicken Salad



1 small bulb of fennel, washed, and thinly sliced

150g green beans, washed, trimmed and blanched

2 bunches of asparagus, washed, trimmed and blanched

2 smoked chicken breast, thinly sliced

1 cup mixed lettuce leaves

Dressing ingredients:

¼ cup extra virgin olive oil

2 tbsp. apple cider vinegar

1tsp dijon mustard

½ an orange, juiced

1 tsp. orange zest

1 tsp lemon zest

2 tbsp. parsley, finely chopped

pinch of salt





In a large bowl mix all of the salad ingredients together.

In a jar or small bowl mix together all of the salad dressing ingredients.

Combine the two together and serve on a large serving platter or bowl.
