Fancy Pesto Corn Thins Snack

Serves 2
Time 10 minutes


4 corn thins – multigrain

2 slices of Jarlsberg cheese

1 tomato, cut into rounds



1 cup basil leaves 

¼ cup parmesan 

2 tbsp roasted pine nuts

1 garlic clove

¼ cup extra virgin olive oil 

Pinch salt


Blitz pesto ingredients in a food processor or blender until all of the ingredients have combined.

Spread onto 2 corn thins.

Top with cheese, a slice of tomato and make a sandwich with the other corn thin.
