Fakes (Greek Lentil Soup)


1 cup dried brown or green whole lentils, soaked overnight and drained

1.5 litres of veggie stock and 1 litre of filtered water

1 large onion, finely diced

1 cup celery and the leaves, finely diced

1 cup carrots, finely diced

½ cup zucchini, finely diced

½ red capsicum, finely diced

1 400g can chopped tomatoes

3-4 garlic cloves, crushed

1 cup parsley, chopped

2 bay leaves

1 tsp cracked black pepper

1/3 cup extra virgin olive oil

1 tsp oregano, dried

Sea salt

2 tbls balsamic vinegar


Bring your stock and water to a simmer then add the lentils and veggies. Let it simmer for 30 minutes then add the tomatoes, garlic, parsley, bay leaf and pepper. Continue to simmer for another hour or until the lentils are tender.

Now add the olive oil and oregano to the pot. Taste also for seasoning. You may want a little sea salt. Let it continue to simmer for a few minutes then finally add the vinegar and stir.
