Dutch Mango Pancake

Ingredients

3 eggs
¼ cup brown or raw sugar
¾ cup buttermilk
¼ cup butter, melted
pinch of salt
½ cup self-raising flour
1 mango, cheeks diced
cinnamon sugar
Maple syrup

Method

Preheat oven at 200C and pop a greased baking dish to heat up.

Mix the eggs, sugar, buttermilk, melted butter, pinch of salt and flour together in a bowl. Whisk for a minute, until smooth and there are no lumps.
Add mango dices into mixture.

Put the mixture into the hot baking dish and place into the oven at 200C for 20 minutes or until golden brown.

Serve with a sprinkle of cinnamon sugar and maple syrup.
