Dukkah Roasted Vegetables

Serves 4-6
Time 50 minutes


½ cauliflower, cut into florets 

1 sweet potato, peeled and cut 

½ red capsicum, sliced

½ yellow capsicum, sliced

½ green capsicum, sliced

1 carrot, cut into wedges

1 red onion, sliced 

1 parsnip 

2 potatoes, wedged 

1 bulb garlic, sliced in half 

Extra virgin olive oil 

1 packet pistachio dukkah with thyme


Preheat your oven to 200C. 

Place all of your cut vegetables on a baking tray lined with baking paper. Cover with a drizzle of olive oil and sprinkle with a generous amount of dukkah. 

Bake the vegetables for 30-40 minutes, or to your liking.
